Mini Pavlova Recipe

Mini Pavlova Recipe

Preparation Time 20 minutes

Cooking Time 25 minutes

Ingredients
2 egg whites
1/2 cup (110g) caster sugar
300ml thickened cream, whipped
2 bananas, sliced
1/2 (125g) fresh strawberries, hulled
2 passionfruit, pulped
Directions:
Preheat oven to 150°C. (238 degrees F.)
Line 2 baking trays with baking paper.
Place egg whites into a clean bowl.
Beat with electric beaters until soft peaks form.
Gradually add caster sugar, beating well between each addition.
Beat until mixture is thick and glossy - this will take at least 5 minutes.
Spoon heaped teaspoonfuls of the mixture onto baking trays.
Flatten meringue into a disc.
Bake for 20-25 minutes or until crisp.
Cool completely in the oven with the door ajar.
Top meringue with cream, and decorate with fruit.
Serve immediately.

Playdough Cookies


Play Dough Cookies

3/4 C butter
3 ounces cream cheese
1 cup white sugar
1 egg
1 t vanilla extract
2 and 3/4 C flour
1 t baking powder
1/4 t salt
assorted food coloring
...

1. In a bowl cream butter, cream cheese and sugar until fluffy.
Add egg and vanilla. Beat until smooth.

2. In a bowl combine flour, baking powder, and salt. Add dry ingredients to the creamed mixture. Stir until soft dough forms. Divide dough into Fourths. Tint each with a different food coloring. Wrap in plastic and chill for two hours. (I stuck it in the freezer for 15 minutes because I hate to wait!)

3. Preheat oven to 350. Shape colors into 3/4 inch balls. For each cookie place one pink, one orange, one green, and one blue ball together and roll to make one giant ball. Roll into a 12 inch long snake, and then starting at one end coil roll to make a cookie. Place cookies 2 to 3 inches apart on greased cookie sheet to allow for spreading.

4. Bake for 8 minutes or until lightly browned. Cool and store in an airtight container.Enjoy!

Southwestern Egg Rolls

Southwestern Egg Rolls

1 chicken breast fillet, diced *
½ red bell pepper, minced *
2 T. green onion, minced
¼ c. white onion, minced
1 can corn (or frozen about 1 c.) *
1 can black beans, rinsed and drained *
2 T. spinach, sliced very thinly (optional)
1 small can green chilies *
½ T. parsley *
½ t. cumin *
½ t. chili powder *
¼ t. salt *
dash cayenne pepper *
1 c. Ceddar Cheese, shredded*
Flour Tortillas *

Avocado-ranch dipping sauce:
1 c. ranch (any style) *
1 whole avocado, mashed (Or more if you like it!)
1 tsp. minced onion *
Salt & Pepper *
Blend together with blender.

Cook chicken and dice. In large bowl mix all ingredients together.
Sauté all ingredients (including chicken) until warm. Remove from heat and add shredded cheese. Mix well. Warm tortillas. Place ½ c. or so of mixture inside a tortilla. Fold completely together so mixture can not escape. Place inside a panni grill or George Forman to grill and melt cheese. You can also make like a grilled cheese sandwich, just put something heavy on top of burrito to grill. Serve with dipping sauce.

Satay Chicken

Satay Chicken Recipe from Stephanie Dow

Here is the recipe for Satay Chicken
I have had requests so here it is.
(you are more than welcome to copy this recipe.)
Chicken 600 grams
12 Bamboo skewers
Sauce:
1/4 cup peanut butter
1/3 cup onion finely chopped
1 teaspoon crushed garlic
1 teaspoon soy sauce
1 teaspoon dried coriander
1/2 teaspoon dried cumin
1/2 teaspoon dried turmeric
3/4 cup evaporated milk
1/2 teaspoon coconut essence
Sauce:
Coat a small non-stick saucepan with cooking spray,
saute garlic and onion for 2 minutes.
Add all the other ingredients combining together well,
bring to a boil, leave to one side.
Cut chicken into long strips.
Weave each strip onto a bamboo skewer and grill until cooked.
Pour Sauce over chicken.

Pizza Crust

Pizza Crust from Kim Ponczoch

1 C sour milk (add 1 tsp. lemon juice)
1 T sugar
2 T butter
1 T yeast
2 1/2 C flour
1 tsp. salt
1/4 tsp. baking soda
Warm milk in microwave (about 30 seconds). Melt butter in pan. Take off heat. Pour milk into butter. Sprinkle on yeast and sugar. Let yeast develop. Stir in flour, salt & soda. Knead well. Let rise 10 min. Spread on greased pizza pan (instead of using cooking spray I just sprinkle corn meal on the pan). Add pizza toppings. Bake for 20-25 minutes at 400 degrees.
